Ingredients: 2 medium red potatoes 1 onion 1 green pepper 1 cup mushrooms 2 cups turkey sausage 15 eggs Shredded sharp cheddar (optional) Directions: Boil potatoes until well cooked and prepare turkey sausage if not already precooked. Ingredients: Baby spinach 1 can diced tomatoes with green chillis 1 can black beans 12 eggs Crafted creations Baja lime seasoning Mexican cheese (optinal) Directions: Preheat oven 350 degrees f Combine ingredients in muffin pan and bake for 15-20 min Cool and enjoy I keep refrigerated and reheat for up to 5 days after baking
